Crock Pot Barbeque
1 3-4 # Pork Roast
1/2 large onion, thickly sliced
2-3 cloves of garlic
2 chipotle chilies packed in adobo sauce
Salt and pepper to taste
1 Tbls Smoked paprika
Cook With Mary BBQ Sauce

Place the sliced onions in the bottom of a crock pot along with the whole garlic cloves, cinnamon stick and chipotle chilies.

Trim excess fat from the roast if necessary and place on top of the sliced onions. Sprinkle with the seasonings. Cover and cook for 6-8 hours on high. Remove the pork roast and discard the liquid and seasonings, or set aside for another use. Shred the pork and return to the crock pot. Pour in about 1 cup of Cook With Mary BBQ Sauce and cook on high for another 30 minutes, stirring occasionally. Serve on buns with sliced red onions and dill pickles.

Overnight Slaw
1 small head green cabbage, finely sliced
2 carrots, minced or sliced julienne
1/4 cup minced red onion
1/4 cup dried cranberries or raisins
1/4 cup toasted pecans, walnuts or sunflower seeds
2/3 cup mayonnaise
1/4 cup sugar
2 Tbls vinegar

Toss together the cabbage, carrots, onion, cranberries and toasted pecans. Whisk the mayonnaise, sugar and vinegar together. Pour over the first mixture and refrigerate overnight. Toss before serving.
