Tuscan Tomato and White Bean Soup
2 tsp olive oil
1 cup chopped onion
1-2 cloves fresh garlic, minced
1 -28oz can petite diced tomatoes
2 cans (15 oz) cannellini beans (white kidney beans), drained and slightly rinsed
2 cups vegetable or chicken broth
¾ tsp dried oregano (or about 2 Tbls chopped fresh basil and parsley)
Ground fresh pepper and salt to taste
Parmesan Cheese and chopped fresh herbs for garnish, optional

Sauté onions in hot oil. Add garlic, stir for 1 minute. Add tomatoes, beans, broth, oregano and pepper. Heat thoroughly. Portion and garnish with cheese and parsley.

Bacon, Cheddar Cheese and Fresh Apple Panini
Italian bread or rustic whole wheat bread, sliced
Honey mustard or spicy mustard of choice
Crisp bacon slices or vegetarian bacon substitute (breakfast strips)
Sliced or shredded Cheddar cheese
Thinly sliced fresh crisp apple
Butter or cooking spray

For each sandwich, spread a small amount of the honey mustard on two slices of bread. Layer the bacon, apple and cheddar cheese. Press the sandwich together, then spread a thin layer of butter on the outside of both bread slices.

Grill on a Panini press, a George Forman Grill, or in a sauté pan as you would a grilled cheese, until browned on both sides, and cheese is melted.
