FOX in the Morning

Squash and Corn Sauté

1 Tbls olive oil
1 small onion, sliced or diced
1 pablano pepper, seeded and diced
2 medium zucchini
2 cloves garlic, minced
1 Tbls butter
1 cup fresh corn kernels
Salt, pepper to taste
1/2 tsp cumin
1/4 cup heavy whipping cream
1 large tomato, peeled, seeded and diced, optional

Heat the olive oil in a sauté pan. Add the onion and cook until softened. Add the pepper and zucchini, cooking and stirring until the zucchini is slightly softened. Add the garlic, butter and corn. Season with salt and pepper. Cook for about 3-4 minutes. Stir in the cream and tomato. Heat thoroughly.
